At Biophilia we’re developing innovative solutions with the goal to improve the way we produce, trade and consume food. We designed a sustainable retail system that provides direct market access to small and medium-scale farmers and food producers, while enabling consumers to become, by default, agents of positive change. 1 · Buying Direct From Farmers
Biophilia will buy sustainable food and products at full market price directly from cooperatives and food organizations, providing small and medium-scale farmers with direct market access and creating new synergies. We currently have a network of 8,000 farmers already developed. Buying direct enables us to reinforce and improve fair trade practices, giving farmers the profits they deserve.
2 · Transforming Food Retail Into a Tool for Change
In addition to offering fair-traded sustainable food through an immersive experience, the Biophilia Concept Store allows to turn food retail into a tool for social and environmental performance. While fostering conscious consumption, the Concept Store will bridge the gap between farmers and consumers, who become by default active agents of positive change.
3 · Turning Profits Into Sustainable Agriculture
Ten percent of total profit generated by the Biophilia Concept Store will be invested through the Biophilia Farmer Fund. The Fund will support associated farmers and their community in creating new initiatives in organic and regenerative agriculture, empower rural economies, and help recovering from natural disasters.

By definition, Biophilia is an instinctive bond between human beings and other living systems. This is what inspired us to create a space that lives up to its name, connecting consumers with the core identity of food, its history, traditions and the people and places from where it comes.
The Biophilia Concept Store was conceived and designed to change the way we trade and consume food. Through the Store, farmers will gain direct market access and profitability, while consumers become active agents of positive change, while enjoying a food experience unlike any other.
By offering an immersive experience, Biophilia disrupts the status quo in food retail, changing how food makes its way from farm to table.

Blending Food & Culture Through Nature
The Store will be built using green technologies, combining biophilic architecture and biomimicry design. We shaped an environment that enlivens every sense through a 55,000 sq. ft (5,000 sq. meters) space that was conceived around people, combining innovative design with sustainability, through nature and cutting-edge technology.
We will complete the system by minimizing and composting organic waste —so there’s next to no footprint left behind. The Store will be built using green technologies, and it will be entirely powered by clean, renewable energy thanks to the TESLA Energy System
Through an innovative approach, Biophilia redefines how we relate to food, poles apart from the alienating standardization typical of the commodity culture.

At the Biophilia Concept Store you will be immersed in an interactive, living and breathing environment that will connect you with the core identity of food through the five senses, and the principles of exploration. To discover what’s behind the food we consume will become an enriching experience, through which new aromas and flavors will blend with tradition and innovation.
Biophilia will host a wide range of events and activities, encouraging a participative approach to food, through shared experience. You can also host special events in our space, or have food delivered straight to you through our catering and tailor-made services. The Concept Store will be a unique community-gathering environment, where people learn, shop and eat, while giving back to society.

Multicultural Gastronomic Experience
With seating for 350 people, Biophilia’s 13 thematic restaurants will serve a wide variety of seasonal and regional cuisines that capture the identity and story behind each meal. We will work in collaboration with some of the world’s most talented chefs and food experts to innovate and explore food traditions, while providing a remarkable range of high quality, organic products from around the globe.
Innovative Product Display & Fruition
Food will be organized in thematic areas, developing gradually from raw material to processed product. Each area will be shaped according to the core identity and origin of the products featured. Relevant information about the people and the process behind foods will be communicated interactively through digital technology, allowing unprecedented insight on the food we eat.
LAB & Cooking Programs
Biophilia LAB will be the store’s beating heart, designed for experimentation and discovery. By bringing together consumers, farmers, chefs and food experts, we aim to create a collaborative space for new thinking, new recipes and new products that’ll help pave the way for a new, sustainable food culture. Classes, seminars and workshops will be offered on a regular basis at the Biophilia LAB.
The Store will offer a broad selection of unpackaged food, allowing several farmers to easily market their produce, reducing carbon footprint and mitigating package waste. Buying in bulk contributes to reduce food waste, and allows shoppers to make smarter decisions, by purchasing the exact amount of foods they need, while saving 40% on organic food, compared to packaged food.

The Salt Restaurant
The Salt Restaurant was conceived to be a life-changing resource for the rural community of salt miners living in the Salinas Grandes, a salt desert located in Argentina’s Altiplano. The restaurant will provide direct market access to 58 families, making possible for them to produce and properly trade a range of salt-related products, including salt slabs for cooking and variety of aromatic blends.
Today, the community living in the Salinas Grandes works in extremely harsh conditions, earning USD $ 15 per ton of rough salt. Most of the salt is processed manually, and workers are exposed to extreme sunlight and weather conditions, causing most of them to go semi-blind around the age of 50.
The Salt Restaurant will directly contribute to improve the lives of the rural community living in the Salinas Grandes. The space will be built combining cutting-edge design and salt blocks bought directly from the local cooperative, and will offer a variety of fine Andean food that will be cooked on salt slabs. Additionally, guests will be able to buy a great variety of fine, salt-related products developed by the salineros, in partnership with Biophilia.
Once the Salt Restaurant will be operative, salt miners will proportionally earn up to 10,000% more than now; by gaining direct market access, miners will start developing new products with value added. Working and living conditions will dramatically improve and the local community will finally be able to develop an independent economy.
THE BIOPHILIA CONCEPT STORE WILL IMPLEMENT A MULTILAYERED ZERO FOOD WASTE POLICY
Zero Food Waste Policy
Every year, the US wastes 40% of total food supply; through our Zero Food Waste Policy, Biophilia will contribute to reduce this number. Among other initiatives, our store will offer a great selection of organic, perfectly healthy, “ugly” fruits and vegetables that too often lose the insane “beauty contest”—and never make it to shelf.
The Mushroom Farm
Composting organic waste will be used to grow mushrooms indoor, leaving zero food waste to rot in a landfill. Mushrooms from the farm will be then processed and transformed into a variety of sustainable products that will contribute in turning inevitable waste into new resources.
Healthy Nutrition Program for Schools
Food literacy helps children to make better food choices and reflect on their choices’ ecological and social implications. In partnership with chefs, nutritionists and other food specialists, Biophilia will create programs and initiatives to be developed with students, teachers and parents, to raise awareness about healthy, sustainable habits.
The Aeroponic Garden
In an effort to promote local sourcing and sustainable urban farming, we will create and manage our own indoor farm, combining cutting-edge technology with design, right in the middle of one of the world’s busiest cities. Biophilia’s Aeroponic Garden will encompass about 20% of the store environment.
Biophilia’s indoor crops will be organized into lots and will mainly produce leafy greens and herbs, so that customers can rent their own lot to grow fresh, local, organic produce. Compared to soil growing, aeroponic farming allows to use 90% less water and requires no pesticides, herbicides, or fungicides.

“It’s a very special honor to be working on a project so deeply committed to do the right thing. As soon as I was told the premise of Biophilia, I understood its amazing principles and potential. Essentially, Biophilia manages to balance great intentions with the reality of business: helping rural communities from the US and around the world while being enormously appealing on a commercial level.
Biophilia was designed to provide a rich experience centered on fair-traded, sustainable food — a meaningful a experience that cuts deep into the complexity of its origin, shaped around the people and places in which it was conceived.
But perhaps, the most inspiring element that brought me to the project is the relentless, contagious enthusiasm of its creator, Marco Vernaschi. He represents a very rare mix of dreaming big while keeping a rigorous and savvy sense of reality. A complex project about fairness, health, pleasure and beauty… sounds like real life. I am very lucky to be a part of it.“
